PROVENANCE:
Region: Douro Demarcated Region.
Soil: Slatey nature.
Cultivation Method: Traditional vineyards and terraces.
Average Age of Vineyards: 30 to 40 years.
Average Batch Age: 6/7 years.
Average Production: 25 hl/ha.
GRAPES:
Touriga-Franca, Touriga-Nacional, Tinta-Barroca, Tinto-Cão and Tinta-Roriz.
VINIFICATION AND AGING:
After receiving the grapes, which should arrive at the winery in perfect condition, their crushing and destemming is carried out. They ferment for 3 to 4 days with the skins, regularly immersed by pumping over, for greater extraction of color and aromas. This is followed by the separation of the skins from
from the must, to which 77% v/v grape spirit is added, so that the wine has 19% alcohol and 90 to 120 g/l of reducing sugars of the grape itself. Aging takes place in small capacity barrels and wooden casks.
VISUAL ASPECT:
Blondish color.
OLFACTORY APPEARANCE:
Presents aromas of quince and jelly well integrated with vanilla notes from the aging in wood.
TASTE:
Soft attack, with sweetness and persistence. Reveals, at the end of the mouth, its
time of aging by the presence of notes of jelly.
CONSUMPTION:
Accompaniment: Great aperitif. It accompanies sweets, fruits, light cheeses and liver paste.
