Produced from Encruzado grapes from a vineyard over 40 years old, we decided to revisit the traditional way of making white wines at Casa da Passarella. This led us to the discovery that, in the past, white wines were fermented using fermentation methods—just like red wines. Historical research reinforced our conviction and commitment to this method, the results of which are now clear to see.
