Traditionally, cod requires red. But since tradition is no longer what it was and the Portuguese whites are becoming undiscovered, it is not a sin to risk other experiences. White or red, there are, however, some basic rules that are worth considering. By tradition and tradition, cod is for many people, perhaps most, a fish that recommends reds. Its unctuous body or the salt requirement imply a structured, warmer and less fruity wine. But many people start to prefer whites. After all, the cods palate recommends a fresher wine in the mouth. So where do we stay? Probably and given that the combination is very subjective, the best thing is to choose the wine that for each of us will make more sense with the cod and the way we will make it to the table.
