MADEIRA WINE JUSTINO´S BOAL 10 YEARS

GRAPES / VARIETIES: Boal.

VINE DRIVING SYSTEM: 
Lathe (usually formed by horizontal wire structures supported by wooden or iron posts) and Espalier (Guyot or unilateral or bilateral cordon).

HARVESTING METHOD: 
Manual, with qualitative selection, for several weeks according to the state of ripeness.

VINIFICATION: 
Total destemming, crushing and pressing. Winemaking in bica-open. Fermented totally in stainless steel vats with temperature control and reassembling times. Interruption of fermentation by the addition of wine alcohol 96º. Addition of wine alcohol made after 8 - 10 days of fermentation in order to maintain the amount of sugars
desired. Vinification made according to traditional methods.

MATURATION / AGING: 
Aged by the traditional system of Canteiro, in French and American oak casks of different capacities. Blending, clarification, filtration and bottling.

AGING DATE: When placed on the market.

TASTING NOTES:
Color: Attractive and bright amber. Aroma: Intense, reminiscent of dark chocolate, molasses, and caramel. Slightly sweet, it presents complex aromas and flavors of dried fruits, spices, and nuts.

RECOMMENDED OPERATING TEMPERATURE: 9º - 11ºC.

HARMONY/SUGGESTIONS OF SERVICE: 
No need for decanting. With a marked acidity, less full-bodied and with less residual sugars, served a little fresh, it is excellent as an aperitif, with olives, toasted almonds,
smoked salmon canapés, sushi, caviar, tuna, light soups, salads, ham, dried fruits like almonds and nuts.

CONSERVATION: 
Keep in an upright position, protected from sunlight and in a moderate atmosphere without great variations in temperature.

CONSUMPTION: 
Bottled ready for consumption but lasts several months, in good conditions, after opening the bottle.
