VINIFICATION:
Environmentally sustainable viticultural practices on 25 year old south oriented vineyard on well drained limestone soil. Nocturnal harvest with blending of grapes in the press, treaded by foot in the following dawn.

AGING:
Aged in French and American oak barrels.

TASTING NOTES AND GASTRONOMY
Notes of vanilla and dark chocolate. Robust palate, showing engaging tannins
tannins.
