BORGES QUINTA DE SÃO SIMÃO DA AGUIEIRA RED WINE

Coming from the estate where the largest continuous vineyard of the Dão is planted, this wine has roots in the traditions that made the region famous.
 

GRAPE VARIETIES:
Touriga-Nacional, Jaen, Alfrocheiro and Tinta-Roriz

VINIFICATION AND AGEING:
Complete destemming of grapes. Brief pre-fermentation maceration followed by fermentation in a tannery for 6-8 days at a controlled temperature of 26-28º with relatively frequent pumping over. After alcoholic fermentation, the wine is separated from the mass with which it fermented and malolactic fermentation takes place. Part of the wine is aged in stainless steel tanks and another part is aged in French oak barrels for 15 months.

TASTING NOTES:
Visual Appearance: Impeccable, deep ruby color.
Olfactory Aspect: the nose is invaded by a vibrant and fresh perfume, dominated by notes of orange blossom, complemented by citrus touches of bergamot. At the end, subtle smoky nuances and a touch of vanilla emerge.
Taste: On the palate, the striking flavor of bergamot stands out, gently sweetened by a touch of caramel from the aging in wood. texture is soft and velvety, with smooth tannins that provide a harmonious balance. The finish is long and refreshing, characterized by a pleasant acidity.

PARING:
Great to accompany poultry, meat, sausages, cheeses and some fish.
