COVILHÃ MIXED CHEESE - CAW, SHEEP AND GOAT

Covilhã Mixed Cheese represents the most traditional and artisanal expression of the blend of cow, sheep, and goat milk. Produced with less pressing, it develops a naturally butterier texture and a softer interior, which is immediately apparent upon cutting.

The flavor is more expressive and enveloping, with a greater sensation of unctuousness in the mouth and a marked aromatic evolution, typical of less pressed cheeses closer to traditional methods. Each piece presents small natural variations, reflecting the vibrant character of the milk and the less industrial process.

It is a cheese designed for connoisseurs who value creamy texture, authenticity, and a more rustic profile, ideal for leisurely tasting, accompanied by rustic bread and wine, where the cheese is the star.

Details: blend of 3 milks, rennet, and salt. Minimum maturation of 35 days, complex texture with evolving flavors.
