Cheese made from raw goat's milk. Coagulation is obtained using rennet of animal origin. The cheese is manufactured in accordance with all hygiene standards.
Cheese matured for at least 40 days. From semi-hard to semi-soft paste, with few or a few small, irregular eyes distributed throughout the dough, of a matt white colour. The cheese is cylindrical in shape, regular, with defined edges, the crust hard, whole, well formed, irregular, yellow to brownish in colour, not uniform in colour.
Strong taste and aroma. The rind may be dark brown in colour.
