VINIFICATION:
The aim is to make winemaking with a gentle extraction, which is why the grapes are not de-stemmed and only partially crushed. Ferment in an open-topped tank, with very little maceration, for ten days. Aged in used 500 liter barrels for 16 months.

TASTING NOTES:
Open color, little loaded. Aromas of forest and wild fruits, in a combination of great vivacity and freshness. Smooth and very long aftertaste.
