PROVENANCE:
Region: Douro Demarcated Region.
Soil: Schistose nature.
Cultivation Method: Traditional and continuous vineyards on the top.
Average Age of Vineyards: 40 years.
Average Production: 30 hl/ha.
GRAPES:
Malvasia-Fina, Gouveio, Rabigato and Viosinho.
VINIFICATION:
After receiving the grapes, which should arrive at the winery in perfect condition, their crushing and destemming is carried out. The must coming from the pressed grapes is cooled down to 8-12 °C and decanted. After decanting, fermentation is started with temperature control
(12-14 °C). After fermentation the grapes are fortified with grape brandy at 77% v/v. The aging takes place in small capacity barrels and wooden casks (barrels and half barrels).
VISUAL ASPECT:
Golden yellow color.
OLFATIVE ASPECT: Complex aroma, with dried fruits such as hazelnut and grilled almond. Presence of spices and notes of curry stand out, showing the age of the wine.
GUSTATORY ASPECT: In the mouth, the acidity lends the wine a vivacity that is balanced by sweetness. It is persistent, with the presence of dried fruit flavors, such as hazelnut, and spices, such as curry.
CONSUMPTION:
Recommended temperature for tasting: 12 to 14 °C.
Accompaniment: As an aperitif or to accompany dried fruit, sweets with citrus fruit or starters with smoked salmon or sushi.
